The Kabsa is a Saudi Dish of chicken or lamb and rice. Kabsa is the Saudi's Arab national dish since it's so loved by all Saudis and all foreigners who have had a chance to taste it. There are many type of Kabsa.
Each home has their own style of making it, or the like. Kabsa is similar to Majboos which is another Saudi dish. Kabsa is made differently in each household, some incorporating vegetables such as carrots, lamb, beef or fish. Often it is served with a homemade tomato sauce 'Dakkous'.
It's really easy to cook Kabsa at home, all you need to do is in the pressure cooker, put the cooking oil and all the pieces of meat, saute for couple of minutes,add the chopped onion and let it cook for few minutes until the onions turn golden brown. Then add the chopped garlic with all the spices, add enough water to cover the meat and close the pressure cooker. Let it cook in medium high heat and count 30 to 45 minutes. In another pot full of water and a tbsp of salt that you brought to a boil, add the rice and cook half way for about 9 minutes, Drain and rinse the rice with cold water to stop the cooking process.
We can also put the green coriander leaf on the top of Kabsa and serve it with fries and fattoush salad which is most loved salad of Saudi's, with hummus on the side.
